When life gives you tomatoes, what do you do? Make pasta with tomato sauce! That’s how easy it is to make this simple yet delicious tomato sauce based pasta recipe. Pairing it with some cheese, grilled paneer or grilled chicken and side of salad, sautéed vegetables or soup will make it a complete balanced meal. You can also use this tomato sauce for other Italian recipes like home-made pizza or baked vegetables. We’re getting too hungry already, aren’t you? ;)

Why is it healthy?

  • Whole wheat is rich in fibre, B vitamins and minerals like magnesium, zinc and copper. It provides carbohydrates to fuel our body for day-to-day activities.
  • Veggies added to this recipe helps to add additional fibre, vitamins and minerals to the dish.
  • Herbs and spices added like bay leaf, dried oregano and basil to the dish help in better digestibility.
  • Olive oil is rich in monounsaturated fatty acids, contains antioxidant properties and is beneficial for heart health and weight management.

This recipe is ideal for kids or adults both alike who like to try new recipes everyday. People who are diabetic, hypertensive (high BP) or have high cholesterol can have this as their main meal. If you’re just looking to eat right and healthy or even trying to shed some weight, you can have this recipe as a well.

🥗 What you’ll need:

For the home-made tomato sauce,

  • Tomato (peeled and quartered tomatoes)- 2 to 3
  • Tomato ketchup- 1 tablespoon (optional)
  • Onion- 1/4 cup
  • Garlic (finely minced)- 1–2 cloves
  • Dried oregano- 1/2 teaspoon
  • Dried basil- 1/2 teaspoon
  • Bay leaf- 1/2 piece
  • Salt- to taste
  • Olive oil- 1/2 teaspoon

Other ingredients,

  • Whole grain pasta (any kind, boiled)- 1 cup ; We like to use penne
  • Veggies of your choice (bell peppers, mushrooms, peas, corn, olives etc)- 1/2 cup
  • Red chili flakes- 1/4 teaspoon
  • Olive oil- 1 teaspoon
  • Salt- to taste

✋Method:

  1. To make the tomato sauce, in a large saucepan, heat the oil over medium-high heat and add the onion and sauté for about 5 mins.
  2. Next, lower the heat to medium and add the garlic and sauté for 1 to 2 minutes, making sure it does not brown.
  3. Add the tomatoes, tomato ketchup, dried oregano & basil, bay leaf and salt. Add about 1/2 cup water and bring to a simmer.
  4. Lower the heat to keep at a simmer for at least 20 minutes. Partially cover the pot and adjust the heat to maintain a simmer in case the sauce starts to splatter.
  5. Transfer into a bowl, discard the bay leaf and set aside..
  6. Next, heat a large sauté pan over medium heat and add the olive, veggies of your choice & chilli flakes and sauté for a bit. Stir in the tomato sauce and simmer uncovered for 5–10 minutes.
  7. Add the cooked pasta to the sauce. Stir well and add a little pasta water if needed to loosen the sauce. Season with salt to taste and Vegetable Pasta in Home-made Tomato Sauce is ready! Enjoy!
