Baby Corn & Mushroom Salad! It just sounds yummy!! Salads can be quick to make but not as boring as you think. Here is such a recipe to prove how salads can be interesting and tasty to indulge in. This salad can be enjoyed as a whole meal or as an evening snack.

Why is it healthy?

  • Baby corn is high in potassium, folic acid and vitamin A, B, E. Its Vitamin A content is beneficial in maintaining eye health.
  • Mushrooms are a low calorie food which are loaded with many health boosting vitamins, minerals and antioxidants. They are also a good source of vitamin D, an important component for bone and immune health.
  • Spring onions are a good source of vitamin C, which boosts the immune system
  • Capsicum is good source of vitamin C, vitamin K1, vitamin E, vitamin A, folate and potassium.
  • Capsicum contain antioxidants such as capsanthin, violaxanthin, lutein, quercetin, and luteolin which is associated with many health benefits such as preventing heart disease and cancer.
  • Lime juice is high in vitamin C and antioxidants both of which offers wide range of health benefits such as improve immunity, prevent kidney stones, aid iron absorption, and promote healthy skin.

🍽️ Serves: 1

🥗 Ingredients:

  • Mushroom (chopped)- 1/4 cup
  • Baby corn (chopped)- 1/4 cup
  • Spring onion (chopped)- 1/2 tablespoon
  • Capsicum (chopped)- 1/4 cup

For the dressing

  • Lemon juice- 1/2 teaspoon
  • Basil leaves (chopped)- 1/4 teaspoon
  • Olive oil- 1 teaspoon
  • Garlic (minced)- 1 to 2 cloves
  • Salt to taste
  • Pepper- as per taste

Method

To prepare the dressing

  • Heat the oil in a pan, add the garlic and saute till it browns slightly.
  • Add the basil leaves and mix well. Cool completely.
  • Add the lemon juice, salt and pepper. Mix well.

How to Proceed

  • Heat some oil in a pan, add the spring onion, mushrooms, baby corn and capsicum. Mix gently and cook on a medium flame for 2 to 3 minutes.
  • Once it’s cooled, cover with cling wrap and refrigerate till required.
  • Just before serving, add the dressing to the salad. Toss well.
  • Baby corn & mushroom salad is ready. Enjoy! :)
